Se stated that while she loved the stroller overall, it was inconvenient in that every time she wanted to fold the stroller she had to remove he car seat adapter before folding, thus adding extra steps.Is this truly the case? Are there different car seat adapters that eliminate this extra effort? Do other strollers not have this issue?

Your City Mini will be optimally compact without the adapter attached; and, with it attached, it'll be a little bit bigger.Strollers that "can fold" and "can't fold" with the adapter attached really depends on the brand. If a top stroller feature for you is that your stroller can fold with the infant car seat adapter attached then you should consider Baby Jogger, UppaBaby, and Stokke stroller brands.
